I am admittedly currently experiencing writer's block. There is simply so much that I want to say regarding food and my many health issues that it's rather overwhelming- and I made the mistake of not organizing my ideas in a list. (I love lists!)
In a nutshell, I am starting this blog to help those out there with medical issues like fibromyalgia feel better by feeding their bodies the fuel it needs. A number of blogs I follow leave me feeling down, as they are written by "normal" people with energy to cook every day.

Add to that the increasing number of food allergies I have developed over the last few years: cucumber, raw tomato, wheat, rice, garlic, lettuce, soy, ice cream.... and more that I haven't yet figured out. You have a recipe for depression and hunger!
A severe latex allergy also has me avoiding some highly cross-reactive foods such as avocado. I'll be developing another blog regarding latex allergy- in the meantime PLEASE avoid latex and rubber products as much as possible! Trust me, you don't want to have to wear a gas mask every time you leave the house so you don't die.
So I have this fairly limited diet, but I've found a recipe box full of safe recipes to try. The problem, of course, is that I haven't had the energy to try most of them! I'm praying that this blog will help motivate me a bit in the right direction, as when I don't cook I often "cheat" and pay the price in all sorts of non-Martha Stewart ways.
One of the requirements of my recipes is that they are easy and the leftovers keep for at least four days. I would LOVE to be one of those women that cook one day, all day, once a month.... but only time will tell.
